     Tip for the Month    

 

When a bottle of red wine has been opened and the nose and flavour are closed in, leave the bottle open in the kitchen for a few hours and then cover and leave for a couple of days.  You may be surprised at the improvement.

This tip was given to us by a restaurant chef in the tiny village of Cantobre in the Cevennes.  He was referring to some wines from the Faugers appellation at the North East corner of the Pays d'Oc.  The wine on our Red Wine page was transformed using this method.
